Barbie Princess and the Popstar Party

My small cakelette aka Hanelle turned three years old. We had a small celebration in a cozy kids playground in Changi City Point Mall. This is her first birthday celebration, we never really had birthday party for her, while her sister had 2 birthday parties before when she was 1 year old and 4 years old.  

I am glad that she finally turned 3 years old. Her terrible two antics drove me crazy sometimes. She is such a demanding toddler. She would ask me to scratch her back at night before sleeping, the scratching can last up to 1 hour and she still did not sleep.  There was a short period when she just refused to wear anything to sleep, so I waited until she slept and put on her pajama. 
Till now she uses my left arm as her pillow, at least 8 hours a day. I hope this stage will be over soon and I can have my left arm back. 

The birthday cake is  a 2 layer cake. The bottom cake is a coffee butter cake with coffee buttercream and salted caramel cream. The top layer cake is chocolate cake with chocolate ganache and chocolate buttercream. 
                                                 

The cupcake is lychee rose cupcakes with rose buttercream. 
                                  

The macarons are salted caramel and rose macarons.

Manchester United Cupcakes

Yes this is for a Manchester United fan. He is 12 years old today. I know him, or more like know his mother for 7 years , so I have sort of "watched" him grew up. I still remember when her mum told me about his first day in primary 1, now he is primary 6. Time flies really fast.

My big cakelette aka Hebe knew about this cupcake project. She told me yesterday that she wanted to wake up early to help me bake the cupcakes. She woke up at 6 am and I was still too sleepy because I made the fondants deco till 2 am; and told her to sleep again. She was upset :p. She refused to sleep although I patted and patted and patted her until my hands were super tired. At the end she looked for daddy who has woken up, and after a few minutes she slept in his arms.

This soccer theme is very fun. First I have to make the nice bright red color of MU uniform. Once the uniforms are cut, the next challenge would be to write on the uniforms. Initially I put AIG instead of AON, coz I didnt know they have changed their sponsor. Now you know, I am not MU fan, or to be exact, I am not even soccer fan. I cant stand spending 2 hours in front of TV to watch 22 people running after one ball. I would rather utilize the 2 hours for my beauty sleep. 

After I finished writing the AIG for all the uniforms, only three actually,  I proudly presented my creation to hubby. He immediately screamed and said that it is no longer AIG and started lecturing me that he told me before to check what is the uniform. He then showed that it is supposed to be AON. *sigh*. I managed to "erase" the "I" and "G", then replace them with "O" and "N" ^-^ .. not too bad.
This is the result before cleaned up.
                                    

After the uniforms were completed, I continued with the shawl. I like making the end part, the black thing, it reminded me of a mermaid tail. The shawl is quite straight forward to make.
                                       

Making the ball is quite fun too. Although it is not as simple as it looks like. First I tried making the pentagon without template, and it was totally ugly. I gave up, printed mini pentagon template and then cut the shapes on black fondants. The result is pretty cute I think. 


More pics below. I hope the birthday boy likes his cupcakes. The cakes are chocolate genoise sponge cake with Callebaut chocolate ganache filling and topped with either vanilla buttercream (green ones) or chocolate buttercream (red ones). Because of the chocolate, the red color of the buttercream is not as bright as I want them to be.

Macarons marathon

Baking 400+ macarons is a different ball game from baking 40 macarons. Spent 2 days of marathon mixing, piping and baking followed by packing.

Despite the lack of sleep, i feel super happy and satisfied! The adrenaline rush of macarons making marathon is definitely much better compared to meeting project deadline.

I am glad that the bride that ordered the macarons for her wedding favor is happy with the macarons.

Kallen's First Birthday

Kallen was born last year, the year of Dragon. His daddy wanted dragon themed cupcakes to celebrate his first birthday. The cupcakes flavour is salted caramel.

Since Kallen's zodiac is water dragon, this blue dragon is representing Kallen - with a pacifier ^-^. 

The purple dragon is for Kallen's second sister - Nikki. She loves purple. 



Two pink dragons; one for Hebe and one for Nicia since they love pink. I think the dragon eggs are cute, but the kids prefer the dragons.

Mexican Wedding Cookies (or Russian Tea Cake)





This is the only cookie I know that has so many names. It is also known as Russian tea cake, snowball, butterball, polvorones in Mexico, mantecados in Spain, snow white (putri salju) in Indonesia. There are just too many variations of it. 

Russian tea cakes appeared in Russia in the 18th century as a confection used in a tea-sharing ceremony. By the 20th century, they were a part of wedding and Christmas traditions in the U.S. 

The first russian tea cakes that I tried was air flown from United States. My uncle, who lives in US, got married during Christmas time, two years ago. Since the cookie is a wedding and Christmas tradition, it was served in the wedding two years ago. My mother attended the wedding and she liked the cookies so much that she asked my uncle for some cookies to "tapao" a few pieces for me and my brothers. I only got to eat one piece, yes, only one precious piece. So the following year, I booked 4 tickets to US and stuff myself silly with the russian tea cakes and other goodies. 

I cannot keep on going to US just to eat russian tea cakes, right. The air tickets are just too costly for 4 of us and the jetlag that we have to suffer was unbearable for me. The two cakelettes woke up at 2 am for the first one week and I was extremely exhausted. I tried to stay awake during day time and could only sleep for 2-3 hours daily.

I wished I could just order in Amazon and get them posted here via Vpost. I wished that too for Laduree and Pierre Herme goodies. Since I could not buy one here, I can always try to make them. So the search for the best russian tea cakes was on. After scrutinising more than 10 recipes and tried some of them, I found a nice recipe that gives that melt in the mouth feeling when the cookie was inside my mouth. The search is over and the result is here.

Langue de chat

Langue de chat (pronounced as lagh de shah) is one of my favorite cookie. Back in Jakarta, I grew up eating this cookie, especially during chinese new year. It is called lidah kucing or katetong which means cat tongue.


Few years back I tried the japanese version produced by Ishiya in Hokkaido. It is more popularly called shiroi koibito. Smooth hokkaido white chocolate sandwich in between two pieces of langue de chat cookies. It was love at first bite. Two years ago I even visited their factory in Sapporo. It's pretty amazing that such simple cookies could be so popular. All food and souvenir shops in Sapporo sell this cookie. Once upon a time, the cookies could be bought only in Hokkaido, then they start selling in Narita and Haneda airports in Tokyo. Occasionally they are sold in Takashimaya or Isetan Singapore when there is a Hokkaido fair, but the price is so expensive. It is such a precious cookie.

I was pretty lucky though, I worked in Japanese bank. Whenever a Japanese colleage went back to Japan, he or she will bring a few boxes back.

Now this is my creation of the langue de chat dipped in Valrhona dark chocolate.

Farm theme cupcakes

I was so excited when Wenxin ordered the Pig farm theme cupcakes for her hubby 30 yo birthday.

She also requested a pig and a rabbit figurines matching their chinese zodiacs. In addition she wanted a bunny and two birds since she has these pets.

The cupcakes are chocolate genoise cake topped with dark chocolate ganache.

Some of the cupcakes have a bit chocolate stains since pigs like to play in the mud!! Yeah right, the fact is that I am quite clumsy when handling chocolate ganache. Tried hard to be as clean as possible, but still there are some stains...

The important thing is that the gal and birthday boy are happy with the cupcakes. Even the pet bunny likes them, she almost ate the bunny figurine tail.
